A little Chinese portrait of our dear colleague: she loves analyzing Google data, having fun with accents (Belgian, Canadian, Indian…), played rugby (or maybe still does — the mystery remains), creates beautiful cakes with sugar paste… and above all, regularly treats us to improvised lunches that are healthy and delicious.
This pumpkin and turmeric soup is one of her must-have recipes: simple, gentle on the body, and ideal for warming up and taking care of yourself after chemotherapy treatments.
Why is this soup ideal after chemotherapy?

Ingredients (serves 4)

1 onion

1 kg pumpkin

1 L vegetable broth

Heavy cream (optional)

2 teaspoons turmeric

Salt and pepper
Pumpkin and turmeric soup recipe

Prepare 1 liter of hot vegetable broth.

Finely chop the onion and gently sauté it in a pot with a little butter.

Peel the pumpkin, cut it into cubes, and add it to the pot.

Stir, then cover with the vegetable broth.

Let simmer over low heat for about 30 minutes, until the pumpkin is tender.

Blend everything, adding cooking liquid as needed to achieve the desired consistency (more or less creamy).

Season with salt, pepper, ground turmeric, and add a little heavy cream for extra indulgence.
